Do this instead... about a month before you leave for your trip, buy or collect a set of ten or more nesting boxes. In the smallest, place your gifted camera. Gift wrap it. Place the box w/camera in the next largest box and gift wrap that... see where I'm going here?

Bad idea. Perhaps she would prefer a D500 since she already has lenses for a crop sensor. I don't think practical jokes are very funny, anyway.

I like to joke around with my Daughter and her Daughter like to joke around with her...
But, I would say don't do what you said your were thinking, that would ruin it for her.
And my Daughter keeps reminding me that she will be in charge of what Rest Home
that she puts me in.....

It seems it's not the first time either , so from my point of view I don't see anything wrong in that. But it's not for everybody :) .
Like me , I bet you know very well where the limit is and with whom you are able to do a practical joke :) After all , this practical jokes involves nothing physically or hurtful for anyone. Only for the D40 which is hired for job especially to get hurt for the audience :)
As the D7200 surely is a grate value to her at this point, and may have some personal feelings attached to it by now, I would not wait to long to give the D7200 back. Stage the delivery so you can just say: And if you should miss the old one , happy birthday my dear, here's your old one.

Apparently, she still speaks to you after her lifetime of living with your brand of humor, so I guess this will be a survivable experience. BUT, since there are differences between the cameras and Full Frame and all, perhaps you might re-think the gifting and do it with a softer approach so she can become familiar with the new body. THAT will really surprise her--I'm just guessing!
