When I'm using my film camera my walk around lens is my Canon 28mm-135mm. When using my Canon 7D my walk around is the 18mm-135. If I don't want to carry a DSLR or SLR I use a small point and shoot. Good luck with your trip.

No, you are not making a mistake in lenses. It is not really a great lens but it is a good lens for over-all coverage. Critics claim it is weak at the wide end but it does not appear to bother too many Canon shooters. The lens has been so popular Canon re-did it and now offers 3 varieties. The lens is well built and accepts all filters on the front end so that cost factor is not too high. Focal lengths from 50mm out to 100mm are what I like for landscape shots. Until the 100-400 twist came along the 24-105 was my most often shot lens. Taking only 1 lens? Great choice! Enjoy your trip.

Personally I would not do that no matter what. I would take the small and light 10-18 EFs if you have a crop camera. Or a FF WA zoom if that is what you have. Even on a FF 24 would be disappointing in the tight situations you will encounter. 105 is OK on a crop and on a FF you can crop. Just from a bit of experience having lived in the vicinity for many years.

I usually take a EF 16-35 L, EF 24-105 L, and a Tamron 28-300 when I travel with my 5D III. Of the three the Tamron stays on the camera most of the time. For general cityscapes with no need for a tele I would probably use the 16-35. That lens is also better for interior shots. I have been shooting a lot candid people pics on my recent travels to SE Asia and having the 28-300 provided that reach for me. Personally, I wouldn't waste a single digital frame on anybody in France.

Probably not. I used my Nikon 18-200 almost 100% in Prague and Vienna. Shots were great! Have a great time!

Consider a small, fast, wide, prime to tuck into your bag for indoor shots. Maybe a fun fisheye?

I'd always want something faster than f/4 to go with it, but on full frame, that's a good travel zoom range. On APS-C, I'd pick up an 18-200. On Micro Four Thirds, I'd get the Leica 12-60mm f/2.8-f/4.
Frankly, I'd look at some Micro 4/3 gear if weight is a concern. You can cover the same fields of view with a kit that is only 1/3 to 1/4 the size and weight of full frame gear.
