Several posters have mentioned Limoncello, which is an Italian lemon liqueur mainly produced in Southern Italy. A side trip I would highly recommend is to the ancient city of Pompeii. Right outside the entrance is a vendor selling lemonade. Do not miss an opportunity to have the best lemonade you will ever taste. FWIW, the lemons there are the size of grapefruits and nothing like the ones you are familiar with.

This is an obvious but important point. You could easily go through 2 or 3 camera batteries in a day. If you are sharing a room with a friend or spouse and they have a camera and a phone you could end up trying to charge five or six devices at the same time and won't have enough electrical outlets to charge everything overnight. I always bring a multi port USB charger and adapter cable so I can plug everything into one outlet. Bring extra camera batteries so you can leave them on charge during the day unless you want to get up in the middle of the night to switch out the batteries. One of those lipstick style external batteries are very usefull too. I charged two cameras and a phone with one on my last trip.
Be sure to have a skirt and scarf tucked into your bag some of the churches are picky about that and no shorts on the guys

This is from someone who tends to overthink things and is always worried that he left the perfect lens for the job at home. I also have almost the identical gear that you have. My wife and I toured Italy a few years back. I had the 28-300 on my camera most of the time. It is a fine lens and covers almost everything that you will encounter. I used the 14-24 occasionally outdoors and used it and the 50mm indoors. The 50mm is so light that you won't notice it. I only brought one body and did not regret bringing my sb910, but to be honest, I don't use flash that much unless I am shooting portraits.
Enjoy your trip. It was one of the best times of my life. The mozzarella in Sorrento was ineffable.
I have been to Italy twice and my #1 recommendation is beware of pickpockets. They are almost everywhere, especially Rome.
Bring any of the 750 or 810 (Full Frame) but only bring one lens and I suggest the 24-70 F2.8. That will cover almost everything. Flash is not necessary since most Museum prohibits using flash.
October is a nice month (not too hot). Have a nice vacation.

A friend of mine had his camera strap cut and the thief ran off with his D7000 and $700 zoom lens, while in Rome last year.

Why the 14-24? That's a monster.
I was almost mugged in Milan outside the cathedral. And again in Florence.
Watch for scooters. The guy will lean the bike and the girl on the back will snatch your bag-have to do cross body strapping.
Sorrento is beautiful at sunset. Positano has wonderful colors. You should try capri as well
Last year I was in and around Rome for 2 weeks, took a Pentax K7 WR {weather resistant} camera and 2 lens, 18-135 WR and 50-300, I only used the 50-300 once. I did however use the WR combination several times in the rain and received many 'you are crazy looks' for shooting in the rain, you will ruin your gear. That was worth the price of admission, and I got some pics that others missed. Have a safe trip.

Actually, the best lens is the 24-120 which, when I was a Nikon guy (now Canon) was my favorite lens. If you take the current variant of that lens, you don't need anything else. I wish Canon made the same range but they have the 24-105/4L lens which is my favorite Canon lens. As one of the other responders stated, forget the long lens, you will not use it. In Italy, I always felt safe but others appear to have had some problemas, so be safe and be aware of your surroundings at all times.
I have taken the same trip that you are going to take. Ditto on visiting Sorrento which became my favorite little city on the Amalfi coast. I would definitely bring the 750d and only two of your lenses the
24 to 70 2.8 and the 70 to 200 2.8. These would cover the whole range of possibilities. Ditto on visiting Capri. Hire a driver and visiting the small village near the top and the backside of Capri. Enjoy your trip.
