There are some pretty good deals on the Pentax K50 right now with varying lens options.
I currently have a Nikon D7000 with several lenses and a Panosonic Lumix, DMC ZS40. I bought the latter for the travel purposes but I am not satisfied at all with the images I capture with it.
I am planning on doing lot of hiking this spring and summer on the Appalachian Trail. Nothing over night, just separate trips on it as well in the local Northern GA mountains. I will also be doing a lot fishing, most likely inclement weather at time.
My Nikon is too heavy to take on these trips I do want a DSLR, not a mirrorless. The K50 is known for its weatherproofing. I thought I would just start out with an 18-55mm lens since is more compact and will allow me to take my scenery shots.
Anyone have suggestions, experience or advice on this setup?

I have exactly the setup you've listed and it has served me well. If you can, also get the D50mm f/1.8 lens for a prime lens. It is EXCELLENT and right now you can get it on Amazon for less than $100.00:

K-50 is better in low light has better Dynamic Range and better Color Depth all around better camera for $100 less

barely on those, and it's doubtful, unless you are master photographer that you'd scratch 50% of the camera's capabilities...and k-50 weighs almost twice as much, and even more once you add dslr sized lenses. As a Marine, it's all about cutting out excess weight/bulky gear when having to carry everything with you on 30 mile strolls though the woods...even if it is just a few ounces...it all adds up in the end.

Tis a shame you ruled out mirrorless. The original em5 is a steal at 379...add a 14-150mm (weather sealed version) and you have quite the lightweight combo.

I should have thought about that option for the OP. He is saving little weight by carrying the Pentax k50 over the Nikon. I also considered The same Olympus combo for a splash resistant camera for sailing photography. I already have both Sony and Micro 4/3 cameras for "walk around" photos, I picked the Pentax for sailing because I won't be carrying it around and I felt that the larger buttons would be easier to use and the larger sensor would give me an edge on image quality

You might save weight but at a lot higher cost K-50 is 295.00 plus DA 18-55 WR for 137.00 is 416.00

EM-5 379.00 plus 14-150 at 399.00 is 778.00 almost twice the cost

I see you're vested already from your signature in Pentax. It doesn't make sense to go outside the family.
