The "level" of the camera is more important than the brand. If the photographer, camera, and lens are about the same level, you will get the most efficient results. If one is lower than the other two, it should be improved to match. :-)
Both are great cameras. It is a matter of personal preference. I use Nikon and love it. I think you will find that right now with the D800 series of cameras and the D7100 camera that Nikon is on a steady climb. But next year, month, or week Canon will come up with some great feature and it will be on top. For the average user (prosumer) either camera will serve you well for years. Each also has an awesome array of accessories and lenses to choose from.
