Subway is a local restaurant and appears to be modifying its menu to meet local demand. It's nearly impossible from behind a computer screen far away from the specific store whether or not that is good business practice. It's likely, though, that the stores' motivation is profit rather than proselytism.
This is fun because so weird. I was in a Subway once in April, a few days ago. I bought their featured sandwich of the month which was pulled pork with supposedly Chinese barbecue sauce. Charlottesville, Virginia area. Not Ireland. ..... no mention of Halal or butchering practices or other hogwash.

I guarantee, Subway wouldn't be doing it if it wasn't good for business. The only thing they are bowing to is the almighty dollar.
Two thoughts. First, I think any technique designed to maximize the the humane treatment of any animal for any purpose is a good thing and in general reflects on who we are as a society.
Second, I despise any group who, because of their religious bias, affects my ability to choose menu items. Thankfully, we have many other choices for subs. Subway is mostly pre-packaged stuff anyway. Nothing special.

Do you, or anyone, know if these were isolated stores or corporate wide? That would make a difference.

It was 200 stores out of about 1500 in Great Britain.
They are probably like McDonald's, local franchise operations. They have to meet base criteria such as uniforms but can make some local choices. One McDonald's near me uses artificial coffee lighteners which are poison to me whereas another uses what is labeled as actual cream, for example. They have differing decor but otherwise all similar.

If the change in menu was done for the Muslim population being predominant in those areas, it makes a certain amount of sense. Personally I would close those shops and let the ingrates find some other place to eat their "Holy" meals. Try to get one of them to take items out of their stores that offend Christians and/or Jews. Bet it wouldn't work.

If I were the franchisee there, I would do whatever necessary to maximize sales.
