I’ve been using a ET Printer for about 3 years. I just run a full color copy (of a colorful magazine page) on plain paper once a week. And I’ve never had a problem and never had to do a nozzle cleaning.
I'm paranoid from earlier Epson printers where fighting clogged nozzles were a regular issue. I now have an Epson ET-8550 and run a scheduled half page print from Qimage One app for glossy paper (using office plain paper) and a Black ink selected only for matte paper selection every three days. (The Black only for matte forces printer to use the matte black ink vs. the "glossy" black ink). No clogs so far - maybe will decrease frequency as I hear successful extended scheduled printing reports like yours. The 8550 prints are outstanding quality and I now am reading that the dye inks from Epson are much improved on longevity.
Never stored I use it all the time but my studio is in an unheated part of my studio area that Isn't worth the time or money to heat so in the winter months I roll, yes thay all have wheels, them into the heated areas.
I still use a 3800, 4900 ang a 2880, all different formats or alter Ink sets to do color, Black and White or should I say correctly "Grayscale" and a special set to do Infrared. Now working on a "False Color" Infrared set.

Thanks much for satisfying my curiosity. When you posted that it doesn't like "the cold", I imagined you kept it in an outdoor garage!

Here are some reviews from actual users. 149 of them, should give you a good idea about it's performance. This is where I usually start and then move on to Utube and the internet for more in depth reviews. I rarely come here for any advice about purchases.

I recently bought an ET-8550 and really like it. The prints I've gotten out of it have been superb It's been sitting for a couple of months now, we've been on an extended emergency trip, I'll see how it does when we return. I'm expecting to have to do a lot of deep cleaning.

I've never had a problem after letting a printer sit. I run the cleaning only when I get banding in prints, which isn't very often.
You could say that, about the same temperature.

not had a problem after leaving a printer sit, whether Epson or Canon. The Canon Pro-something-hundred that I left sit for two or three months was rendered useless. The Epsons (I have had 4) have all (so far) responded to cleaning or deep cleaning, but I try to print something at least once a week just to be safe. The ink is so cheap for the ET printers that I feel it is well worth it.
All printers need to be used regularly to perform best . This is probably more true of Epson Printers and definitely true of Epson's Sure Color 11 ink 10 channel Pigment ink printers.
Dye based inks clog less than pigment based inks but Pigment inks have the edge in color gamut and longevity.
For casual use the 6 color Eco Tank printers are pretty good and make quite useable prints.
The 4 color eco tank printers are great for 'home office' printers. But will also produce decent casual prints.
If a couple power cleanings have not cleared the clog that is not usually a good sign. What do the Nozzle checks say?

I have no solutions for your Epson.
I tried so many "jet cleanings" and new ink wells, but after 6 months of failures.....
I took further action and........Purchased a Canon. It was cheaper, as were the new ink wells.
It never skips or takes a day off.
After so many (professionals) told me that Epson was the best choice for photos, I gave up.
Maybe on the next purchase, I'll reconsider the Epsons.

Dump the Epson and get Canon. I have used nothing but Canon and never had any problems like I hear people talking about on here often. Right now I'm using a Canon MG6120, and I never use anything except Canon ink. It does cost a little more, but the printer always works like it is supposed to.
