18- to 105. That's your best bet.

But, and there's always a but, you should consider taking the 50mm for those low light situations that you will encounter while shooting, specially indoors. It will hardly take any space.

You need to think outside the box. Take your D700 and then rent the Nikon 28-300mm zoom. Its a good lens and will get you everything you need. Want more zoom range, just switch to DX mode. Want a wider shot than the 28mm on FX mode, just take several shots overlapped and then stich them together when you get home, to get that wider angled shot. Spend the money and rent the lens, it will be well worth the cost, in the end. Not too heavy, not too bulky and it should cover about everything you will need when shooting.

Over the years I have come to learn that when it comes to photo gear we take with us more than we need. It has happened to me. The combo that has been suggested by other members should cover the subjects you have in mind. I would have recommended to take also the 50mm f1.8 but since you will be taking the D7000 your field of view will be something like a 70mm lens with full frame and that is not practical since your 18-105 will cover that.

It depends is this a “family vacation” or is this a “photo adventure” if family vacation than 1 body 1 lens maybe a fast f1.2 for no flash shots

I like to travel light. Given your list, I'd take the body you feel more comfortable using and the 18-105. Add the 50 if there is room.

When I went to Iceland I took an 18-200 and a 50. I only used the 50 for the Northern Lights.

18 / 105 give you the best coverage . Some kit lenses are just fine . The ideal would have been the tamron or other 18 / 400 .

D7000 and Nikon 18-105. Because it gives you the most versatility of the bunch. You will need wide for city streets and interiors, with the D7000 you will have reach out to about 155.
This is not what I would take though, on European trips I only take my Sony HX99, has a Zeiss 24-720 mm lens, pop up viewfinder for outdoors, has fill flash, shoots raw, can get sharp 20X30 prints, fits into a belt pouch getting me hands free. I find larger camera's hung around my neck cumbersome and they always get in my way.

GO MODERN -- GO LIGHT WEIGHT

Put it all heavy DSLR stuff in a closet. Buy a pocket superzoom with 1" sensor. Between that and a iPhone your needs are met. Back home after the trip, you and AI will make the images el'Profect0.

Modern Superzooms like my Panasonic TZ100 are a 3 ring circus of still, video, and combo-burst capabilities and has put a layer of dust on my DSLR equipment long in the closet. Add a 52mm filter thread attachment and take a circular polarizer and a hi ND filter for taking scenes eliminating moving things.

All below from Amazon next day Total less than $750.... then sell your big stuff because once you travel light you will never go back to the old. Add two small belt packs to carry all in your choice ... perhaps a chest pack?

Chuck it all and buy a Sony RX10 IV. It will cover nearly everything on your list in a smaller, lighter package than nearly any body and lens combo listed.

I was just in Central Europe for 16 days and only took my 28-200mm Tamron lens. I have a Sony a7riv and the lens and camera were great for this trip. I would recommend a camera holster if you were planning on doing a lot of walking because no matter how light a camera and lens, they will become heavy after walking for miles.

In my younger traveling daze it was my F4 with my trusty 35-70 f2.8 and Kodachrome, things have changed, still have big ol’ Nikon DSLRs FF which I love, and 24-120 f4, but for travel now, it’s my MFT kit, with plenty of batteries 2 em-5’s one with a battery grip, 14-45 and 40-145 kit lenses, plus a Laowa 17mm f1.7 for low light, and it all weighs less, (apparently to me) then oneDSLR w/lens.
Bodies are less than $200 with kit lenses all day long, practically waterproof, indestructible, and 16 really decent mpx.
Or take the d7000 with the 18-105…but, boring…nobody will be impressed with your gear, not that it matters, my little Oly’s always get a convo started.
