I don't think there is anything pure in photography different cameras have different colours some lens might be cool and another warm , contrast may be more or less just with the use of a lens hood. How the image is framed the focal length used might be a choice for a photographer or a fortunate accident. A photograph is an interpretation of a scene. It's rarely a perfect rendition of the reality and really even the reality is different for everybody, different eyesight different feelings, different interests...
So really when you pick up a camera it's entirely up to you how you use it , and the recordings that it makes. You might have a client with requirements and you can attempt to cater for these but if not... well you get to choose how you tell the story.
Photography is a way to record a scene. The content of that scene is the skill or art or what. What is painting? What is drawing?

Painters no longer feel their job is restricted to recording a scene, and there is no reason for photographers to restrict themselves to that either.

A painter who does not paint all the warts will never get a job as a real photographer. Only failed photographers like Picasso or Dali would get involved in Surrealism. They'd be laughed out of UHH.

I wasn't a novice when I first read about SOOC. I had to ask Mr. Google to find out what it means (I could ask the UHH but many would say "Google it").
"CHG CANON" And an old GDOF will sell my pictures with noise in them and call it art.
Simply put photography is about making images using light sensitive materials. There are no restraints or rules outside of the editorial area. It covers a very wide range of techniques and genres. It is both an art medium and a means of communication.

Simply put your post is rubbish. Photography is the art and science of capturing images using a camera.
all photographs are manipulated...either by camera settings (iso, ss, aperture), internal settings such as sharpness, white balance, etc., lens selection (tele vs. wide angle) by the manufacture's jpg algorithms (Fuji looks different than Canon or Olympus) or by the artist or a combo of all the above.
