Chicken Breasts Parmesan

Skinless, Boneless Chicken or Turkey Breasts. Start of many quick recipes. Sliced thinly, pounded, a little eggwash and dry breadcrumbs with your preferred Italian Herbs added. Saute in a little good olive oil till golden. Top with tomato sauce and a mix of Parmesan and Mozzarella. Finish in the oven to melt the cheese. If you have prosciutto in the larder, putting a slice under the sauce amplifies the dish.

Ya know Quixdraw, I'm going to have to unsubscribe to your new foodie section. I just had breakfast, I'm looking at your meal and I'm salivating and I need to lose 25 lbs. (I'll blame the pandemic for the weight) and I love Italian food!! My friends and family think I'm nuts in that when we go out for dinner (not always, but frequently) all I want is spaghetti and meatballs and some good Italian bread with olive oil and salt and pepper...a glass or two of wine and mama mia! Well, thanks a lot, I just gained two pounds.

That looks like a great meal! I love the lighting and shadows that you created in your photo!

My line always was that I could put on weight just looking at food. I grew up in a neighborhood with Italian, German, and Hungarian families also with kids. I ate well. Sometimes there is nothing better than a mess of Spaghetti, meatballs and spicy sausage! This current social aberration motivated me to diet, not giving up anything, just gradually adjusting portion size. I dropped 15. Now I just watch the scale and eat whatever I want. I think the best food is yet to come to the Section, and will keep coming!

Thanks very much! I nearly always use the natural light that comes into the house in the late afternoon. Since all the foods I photograph are our meals, I have to move fast or "enjoy" cold food! I have several favorite spots to stage the dishes.
