Normally I would take my 24-120mm and 70-300mm which usually meets all (most) of my needs. However, I just bought a 28-300mm to be a replacement for the two. On my next trip I will take only the new one and see how it goes.

Actually the OP asked "what would you take..?" Sounds like he is just getting ideas that he can maybe relate to his own present gear. As for myself, Doug (or is it Bev) like many here have said, I have a small-and-light, wide-to-tele zoom that I always travel with. Like Jim, I have a 20mm prime that is also easy to take, so I do. I didn't find, on my own Hawaii trip, that I needed longer than 200mm for my landscapes but if you like BIF then you may need a bigger camera bag than I take.

Sigma 24-35mm and Sigma 60-600mm.

I only take my Sony HX99, has a pop up viewfinder, 24-750 mm Zeiss lens, shoots pans, auto fill flash, and HDR, and also shoots RAW if needed.
I have 6 Mirrorless and DSLR camera's along with over 20 lenses. They are the best money can buy, but I only take my Sony HX99, Why you ask? Because my other equipment is too heavy, gets in my way. I can put my Sony in a belt pouch and I am hands free.
OH, did I mention how sharp the Zeiss lens is, it is really sharp, 20X30 enlargements, no issues.
If you take the D800 with a lens, you are limiting yourself, the 24-750 mm lens on the Sony can match any situation you come across.

My 20mm prime, my 24-70mm bazoom, and (maybe, depending on way too many extraneous factors to mention here) either my 70-300mm or my 28-300mm zoomers. And one or the other of my FF Nikon bodies (ok, probably the D810, just because....).
I'd take these because I know them, and they accomplish what/how I like to shoot.
28-300 & you could leave the 24-70 home, no?

Well that would depend on a couple of factors
Will this be a photo trip or is the trip for tourist , sight seeing and spending time with your wife and bringing the camera for travel photography.
I know my wife puts up with a lot of my photo stops (god bless her) but doesn't enjoy standing around watching me get the perfect shot when "WE" are on vacation.
I would go with a 24-70 or 24-120 and 70-200 or 70-300 Not being a Nikon shooter but looking at lens choices on B & H the 28-300 looks like a nice range for travel .
When we Travel I usually have my 7Dmk2 with the Tamron 18-400 and have no need to change lenses the entire trip.
Don't forget extra batteries and charger, a couple extra cards they are cheep , change them often don't trust your once in a life time trip to just one card , and a couple of sensor cleaning swabs
When I visited Hawaii years ago I took with me the 28-105 Nikon lens and it served me well. If I were doing the same trip today my choice would be the 24-85 and 70 to 300. I can tell you right now that the 24-85 will be the zoom that I will have in use most of the time there. Most probably my use for the 70-300 will be for focal lengths between 105-135. A 24-120 f4 will also be an excellent choice.
If you are not going to be shooting in very dark places I see no reasons to use fast lenses.
The 24-105 or 24-120 f/4 suggestions or a 28-300 would work well. My wife and I have been visiting Kauai and the other islands annually for 30 years and these lenses served me well. One lens on one camera along with a cell phone and/or a small point & shoot and you are good to go. You do not want to leave any camera gear in your car due to occasional theft issues, if it is not there you aren’t going to be worrying about it. I personally would not take an FX or DX camera hiking there, they are just to bulky for potentially loose volcanic gravel and slippery clay conditions. In the past I’ve taken my entire kit but it was a waste of time and effort. Some of our best times were just staring at the predawn and late evening skies for the magnificent star show, magical and no camera necessary because you will always have the memories. Have a wonderful time.
Im a nikon guy and it would sneak 3 in my bag. I would take my Take on 15-30 2.8 g2 for any landscapes and a 70-200 for most other shots. My third if I could take it would be my Nikon 105 1.4 for a portrait or two. When I travel these 3 give me pretty much whatever i run up against.

Until you discard two of them at the gate due to size and weight limitations ...
On family vacations, I take a walk around zoom lens and a fast lens like a nifty fifty for any low light situations. Make sure you have something wide enough for landscapes. Don't forget your battery charger with a spare battery and plenty of memory cards along with a cir polarizer for the beach. For a family vacation, photography should be a secondary priority, mostly memory shots. Enjoy yourself and think more about spending time with your wife than taking pictures.
You may think me crazy but, I would have to take the 150-600 and borrow a Nikon 28-300 with VC. You should take zoom lenses as you won't be able to get to everywhere you want to take a picture from so, with a zoom you can get to at least more of those places.
The other lens I would take if you don't want to lug the monster 150 to 600 is the 10-24. I have a Tamron 15-35 which I like better than the Nikon 10-24 but you will get mostly the same shots. Many people don't like the wide lenses for vacation shots but once you really learn how to use them you can get some spectacular shots.
since I own a d850 which is similar to the 800. I would take the the 2 lenses I own; 24 to 70 f 2.8 and the 70
to 200 f 2.8. But; these are expensive and not light: $2099.95, 38.4 ounce and $2349.95 50.5 ounce. I would consider adding the 16-35 f/4 has vr and takes a screw on filter and is lighter than the 14-24mm f2.8.
take a carbon fiber tripod a good flash, extra batteries, cards laptop. I think I just added over $5,000 to your trip.
The next trip to Europe or Utah I will take the d500 as a backup. I will taking over 10 pounds of camera equipment. I would love to add the 200 - 500mm for wild life; but, not sure I want the weight. Finding a good back back is difficult. do not let the bag out of your sight
