My wife and i will be going to Hawaii September 2021. We have never been. I own Nikon equipment. Since we are flying ( I don't want to check camera equipment). I will be taking just one camera Nikon D800. If you were going and was limited to one or two lens, what would you take..?
Take a wide angle zoom and a 70-300 Zoom. All Nikon with your D800

I’d take my AF-S 24-85mm f/3.5-4.5G ED and either the 70-300mm Stan suggested, or a fast prime (35mm or 50mm).

I don't have Nikon,
but when we went to Iceland I took an 18-200 and a 50.
On the airplane.
In a messenger bag.

You don't say where you are going in Hawaii, what you will be doing, or what lenses you have to choose from. So we may all be really off base. I'd be really tempted to take my D810 and 24-120mm f/4. If something was too far away, I'd crop as necessary.
Now if you provide us with more information, we might fine tune that a little bit.

I did similar with these two lenses on my only trip to Hawaii. But, if you have something longer, like 24-105/135, that would be the only lens you need.
Living on the west coast, we've been there quite a few times. The big question is where are you going and what are you doing? Headed to Kona and looking at the volcano is different than going to Kauai and whale watching. Generally, Id take a wide to medium zoom and let it go at that. And, if I planned on being in the water, I would definitely get an Olympus Tough or Fuji water proof camera..there's lots of life under the water! With the exception of whales, Hawaii is (to me) a wide angle kind of place.

I would take that kit anywhere. The few pix that would need 200 or 300mm are pix I’d just forget about. I am not in the magazine or postcards biz. I make only personal pix and whatever calls for 200 or 300mm is usually not personal.
If I was going with my D750, I would take my 24-120 f4. No other lenses would be necessary. (When I went with my FM2, I only shot with my 36-72 E Series zoom; it was enough.)

If I were going to Hawaii (or Mars, or Newark NJ) I'd take the same lenses I use every day in Utah.
My 20mm prime, my 24-70mm bazoom, and (maybe, depending on way too many extraneous factors to mention here) either my 70-300mm or my 28-300mm zoomers. And one or the other of my FF Nikon bodies (ok, probably the D810, just because....).
I'd take these because I know them, and they accomplish what/how I like to shoot.

The 24-85mm is short in focal length, but there isn’t much offered in that general range. Nikon has a 24-120mm and Sigma a 24-105mm, but both are bigger and more bulky than the 24-85mm. If there was a 24-135mm, or 28-135mm that would be nice. I used to have a 35-135mm.
I have many a lens, 150-600, 300, 70-200, 85, 50, and the list goes on 10-24. But I have not been there, that is way I am asking for your humble opinion. I understand we will be staying in Kona and we will get all over this island in 10 days. I really don't want to take a heavy lens. It is one thing to travel to just take pictures and another to see and experience it. When we go on road trips, the back seat and some of the trunk is completely loaded with camera gear. I like to try different things , but flying , I can't take it all. Yes , I most likely could pick up another lens, I'm good at that. lol
