I have roasted a couple, time to roast depends on the method of roasting.
My first was a 40# I figured the time to be approx. nine hrs. boy did I miss the mark only took around three hrs.
the meal was the next day, so I moved the fire to the opposite end of the roaster and left in the rest of the night and morning.The meat was well done and quite juicy.
Next time I figured the time by the approx. weight of the Ham,time a bit overthrew hrs, same results.
I did remove the head before roasting, my father-in-law wanted to make head cheese.
After all pigs are vegetarians, aren't they?
Cooking a whole pig on a spit, a skill that is slowly disappearing.
Makes me hungry. Been too long since I've been to a hog roast.

What a cute pig that was at one time. He/she was very well loved by it's mother and enjoyed many good playtimes with his siblings. My fervent wish is not to be buried in a concrete box, but to be capable enough when death is imminent, to be able to get to the deepest woods, where my cast off physical self would be of some benefit to life that succeeds me.
