I'm ready to make the jump to a mirrorless DSLR. Looking for suggestions

I have 5 Z's and several DSLRs. I have a host of expensive Nikon, Tamron and Sigma glass. I also have 3-FTZs to en able my DSLR glass to be used on my mirrorless. I also have some Z glass but that doesn't stop me from using my F-mount lenses.

Without going into details already presented, Sony is an excellent choice. I was a Nikon user for 50 years and found a used Sony a6000. Then a Sony full frame body. I use my Nikkor lenses via an adapter.

I have had a D500 for several years and think it is great. Would not trade it at this time as already noted by others. The Mirrorless offer limited advantages. I have a Z7 which is partially GAS. One little advertised thing about the Z7 is that it is not only full frame but will readily use DX lenses, all with the FTZ adapter. It does offer two things I like that are not on the D500: Focus Stacking and a very good full EVF that is plenty bright. While Sony does get rave reviews, the new Canon R5 has impressive specs and very economical lenses. Both the Canon and Nikon can use teleconverters very effectively on zooms at F stops that far exceed the D500.

with Sony you would be able to get an adapter and use your Nikon lenses, but it would be in Manual mode.

How about a Buick. I want more than a Chevy Trax, but can't afford a Caddy Escalade. In truth, a lot will depend on what the camera store offers me for my D500 and lenses.

Over the years I spent a lot of money on boats and fishing gear. Over the years I spent a lot of money on travel. Over the years I spent a lot of money on photography gear. I now find that the hourglass is most likely running out of sand just due to mortality tables. Do I really regret spending any of that money - not really.

As we say in Texas, if it ain't broke don't fix it. Just be happy with your D500--perhaps the best crop-sensor DSLR ever made. But perhaps that is not what you want now?

So what do you want or need? Some people just get a new car every 3-4 years. If you have the budget for it, no problem. Are you interested in switching to full frame? Consider that full-frame cameras and particularly lenses tend to be larger and more expensive than the DX lenses you have now.

This may be a case of GAS. I feel that this is okay as long as the kids don't go hungry. After all, manufacturers need to survive. If a new toy will give you joy so be it. I made the switch from a D7100 to a Sony A7 III almost three years ago, and I still get a lot of joy out of this amazing camera.

What do you shoot? I also have a D500 and that with the 200-500mm lens is my wildlife rig. It’s hard to beat. For everything else it’s my Z7. It’s easily my most used camera and I can use most of my existing lenses on it, although mostly it’s the native 24-70 Z mount. Depending on your needs, the Z50 is supposed to be great and will probably use all your existing glass with the adapter, but if I were you I’d be looking at a Z6 or Z6II. The low light performance is about as good as it gets. The newer II model offers some nice upgrades, including better and faster focus tracking, but if those upgrades aren’t important you can save money with the original Z6. There is a guy on here that uses a Z6 for indoor sports and swears by it.

You may want to stick with Nikon, if you have good Nikon lenses. I would recommend Fuji. I switched from Nikon to Fuji to the XE-2 and XPro-2 which I’m very happy with. The new XT-4 is rated very highly.

One alternative that has not been offered is Canon. No. I don't shoot Canon. I recently watched a Joe Christina vlog reviewing overall camera rentals and lens rentals for 2020 and Canon crushed all the other brands. If a wholesale switch is in the cards, include Canon along with Sony.

I moved from Canon to Sony full frame mirrorless in 2013 and have since had their A7R, A7S, A7 II, A7R II and A7 III. The A7S is still one of the, if not the best, low light camera on the market, although I've found the A7 III to be a very good low performer as well and it is reasonably priced. If you want a higher resolution camera, take a look at the A7R III or IV.

Initially I used MetaBones and Sigma's MC-11 adapters with Canon lenses (and still do with a couple of Canon lenses I love). Since 2013 I've slowly acquired a few Sony and 3rd party FE mount lenses; however, I also love the old Minolta AF lenses with Sony's LA-EA4 adapter.
