I've won Two Chili cook offs with this Recipe. and Since the weather has taken a turn to the cooler side Soups and Stews and Chilis are good for cooler nights Dinners. Anyway I just wanted to share with you all..

Here's the Award Winning Chili Recipe:
Ingredients:
- 2 lb of hamburger
- 1 can of Rotel
- 1 can of kidney beans
- 2 cans of chili beans
- 1 jar of chili sauce (12 ounces)
- 1 jar of medium salsa (or homemade if you prefer) I use Herdez Salsa Casera (Mild)
- 1 Pkg. Taco Bell Taco Seasoning
- 1 medium onion chopped
- 1 green pepper chopped
- 1 Tbl mince garlic
- 2 Tbl chili powder
- 1 Tbl Cumin
- 1 Tsp black pepper
- 1 Tsp salt (or to taste)
- 1/2 Tbl tabasco (or to taste)
Directions:
Brown Hamburger, add to crock pot.
Brown sausage, add to crock pot.
Saute onion and green pepper, add to crock pot.
Add all of the remaining ingredients to the crock pot. Cook for 2 hours or longer (longer is better).
Serve with chopped onions, sour cream, shredded cheddar cheese, or whatever else you like.

Congratulations on your wins! That does look good. I don't see sausage in your ingredient list though, how much do you put in?

I don't use Sausage but when I have access to it I'll use half beef and Half Ground Venison..

I don't understand the sausage reference. Your initial instructions implies that sausage is in addition to the meat. But you say you don't use sausage so use half beef and half ground venison. Is that instead of the 2 lbs of meat ? What about the bulk that additional sausage would add.
I like chili and would like to give it a go but the portions of meat (all sorts) needs explaining.
Please clarify sausage reference. Do you put in sausage or not? Half venison and half beef is not sausage.

Here in New Mexico, we would sub some fresh cut beef from the ranch or recent deer or elk. Scratch all the beans and store bought sauces as well as black pepper and green peppers. We add chopped fresh roasted Hatch green chile, chopped fresh tomatoes and some dried red chile to taste. Saute the meat in a large iron skillet with the chopped onion, garlic, and cumin. Then simmer slowly all ingredients in a large pot for 3-4 hours. If you live in Texas, it’s not chili if it has beans in it! May be a dam fine stew, but chili does not have beans!

All the chili I ever had in Texas had beans in it, and it also had shredded cheese on top if you wanted it. And it was gooood!
Here in Texas, NO BEANS in chili.
I was born and raised in Texas, most of the chili I have ever eaten had beans in it and I prefer it that way.

I've organized several chili cookoffs and set them up like the CSAI rules. No beans and nothing floating in the chili. Meat and broth only. Of course thats for competition.
My crockpot has a High and Low settings. Which is best.

I'm terribly sorry about that Chrissy, My original recipe used Sausage But I don't use it any longer, and didn't use it for the Cook Offs either, I took it out of the Ingredients List but forgot to eliminate it from the directions, you can use 1 lb Hamburger and 1lb Sausage if you prefer or even Ground Venison or Turkey, any combination of Ground Meats you like. so long as it equals a total of Two Pounds..Hope this clarifies the misconception..
