Will an iPad work for my needs?

The answer to your question is an easy YES you can use an iPad for the purpose that you mentioned. I just did the same thing when I went to Asia last summer. All I had with me was my iPad Pro and my Sony camera and it worked so nicely and fast. Just make sure that you have an iPad Pro preferably with 512gig memory. I mentioned iPad Pro because it has USB-C which allows you to connect hard drives, SSD drives, memory card, etc. 512 gig would be more than enough to upload you photos from card to iPad and vice-versa and do some edits on your photos.
Affinity is available specifically for iPads with full functionality and so is Lightroom and Photoshop but with limited functionality. A pencil (generic or Apple) would also facilitate editing especially with Affinity or Photoshop but not really necessary.

I forgot to mention that you need to buy a USB-C Hub so you can connect and read your SD cards. Go to Amazon and search for USB-C hubs, there are tons of them at Amazon and really cheap.
