I like to take interesting sunsets. That said, I was talking to a photographer friend the other day who said that if you’ve seen four or five sunsets, you’ve seen them all. That got me to thinking--is he correct?

I can't say he was right or not but I know sunsets and sunrises do nothing for me photographically. Of course I enjoy seeing a beautiful sunset or sunrise when I am there. Yes they are beautiful. But I don't think I have ever photographed one. Except for the brilliant colors what is there to photograph. I do take photos of other things happening during a beautiful sunset or sunrise.
But isn't that why we are all different, have different likes and dislikes.

Maybe not after four or five, but I have seen hundreds, and they have to be pretty special to interest me.

Sure. Every book I ever read uses the same 26 letters over and over again. And art? Always the same ROY G BIV over and over. Music, 7 notes in a key, or as somebody said about country, 3 chords and the truth.

The numbers and types of clouds, the time of year (at latitude 46.6, sunset is to northwest in summer, southwest in winter), weather and air quality offer infinite possibilities.
If you include the landscape (silhouettes, reflections in water and such), you can double infinity
Sunset and sunrises are all different even at the same spot due to clouds, weather, and atmospheric conditions. That is why I keep on taking images. these were all taken on the same date and show the differences in colors. First two are panoramas

I never tire of their beauty. They are all different and unique, dramatic and colorful, and they're free!

Not in my mind. The great variable is cloud cover and the vast number of colors combinations one can achieve.
