Is your A73 III an A7R III or an A7 III?? Both very capable cameras but quite different resolutions and file sizes.
I've had Sony's A7 II, A7R & A7R II and currently have an A7S and A7 III as well as a RX10 IV. All great mirrorless cameras.
I moved off Canon in 2013 and sold my last Canon lenses just last month. Up to that point I'd bought a couple of Sony lenses but primarily adapted Canon EF & FD, Pentax, Sigma, Tamron and Minolta lenses with reasonable success. I am now totally using Sony and Minolta glass.
It is sad that Canon and Nikon took so damned long to move to full frame mirrorless!

Yes, the Fujifilm XT3 seems like a great camera. One I might consider. No FF for me as I'm rather arthritic.

Me too. Just bought an RP and all my lenses work as well or better than ever.
I'm probably an outlier, but I'm especially pleased with the video performance.
I'm a Nikon shooter but you have to be a hicker which gets good landscape shots them same for wildlife mirrorless is the best way to roll for the lightness & small size the down side is the ruggedness will mirrorless stand up all that said go for it P.S. don't forget about new set of lens

It depends on what type of shooting you do, you haven’t even mentioned what gear you currently have.

Don’t you guys ever sick of telling people they will not get better pictures with a new camera. Maybe the OP enjoys the latest technology and would like a new camera. If you can’t help the OP with his question, try not to say the same thing every time someone request information to help decide on a new camera.
I would never buy a sony due to the much smaller flange opening which will severely new lens designs
