Nerd alert!! This effect is essentially the same as the phenomenon of 'reciprocity failure' in film or of what alternative photography processes call 'self-masking'. The color sensors in the eyes become fatigued, effectively saturated, and when you look away to a full-spectrum presentation of white light, the 'saturated' sensors don't record the same intensity of their particular colors, resulting in your brain receiving unequal color signals, and interpreting it to produce an image composed of all the complementary colors to those that have been saturated. Same reason you see a temporary "spot" if you close your eyes after seeing a very bright light like the sun.
