Just returned from 5 weeks in China and Tibet. I took a 5dmiii, 16-35 L, 50 1.4 and 70-300 L. Covered absolutely everything I did. Also took a G5X pocket which covered many situations when I decided to leave everything else behind in hotel.

Have you considered renting for the trip, here, in Canada,we don’t have the rental option that you have south of the border.

Leave it home; you aren’t going to need it anyway. Enjoy your vacation instead of worrying about a ton of equipment. I’m betting most of what you shoot will be with the wide-angle.

Leave the big gun at home. You'll have a lot more fun and not even miss it. I wouldn't even carry both bodies. Just one and the spare tucked away as a backup with its body-cap on. 24-210 will cover 90% of your shots. (BTW - I Googled "24-210mm zoom, and got no hits. I don't think anyone makes one. You never mention your bodies, or whether FF or DX. Could it be you have Nikon FX, a non-Nikon wide angle, and the Nikon 24-120, but just typed it "210"? I do that a lot!) Either way, I have the Nikon 24-120, and do 90% of my shooting with it on my D750.)

No! You will make yourself and others miserable. Go light. If you feel you must have a 300, rent a zoom. Above all don’t take a big assortment of lenses. Imagine you’re trekking and think about how quickly you could do a lens change on the trail while everyone else waits...

Definitely not! Travel light. If necessary, buy a single-lens, compact camera with a good zoom range.

You will rarely need anything longer than 70mm on a vacation, unless you're hiking in the mountains or across the plains and want photos of birds. A 24-70mm or so f2.8 or f4 is the ideal walk around lens. Have the wife take a superzoom bridge camera for the rare long shots, like a Lumix FZ-200 (28-600mm f2.8).
Go to mitchellk photos or to MEL365 photos and read what the pros recommend.
A 200-600mm FF lens is ridiculously long and heavy to lug around, eapecially in hot and humid VietNam.

I have never visited Vietnam so my tips are general ideas of what I could do if I go based on the information I could receive. First thing first, I do not want to travel with a 200-500 lens (Tamron and Sigma make the 150-600) because it is big and heavy and I know it will be an inconvenience in my trip.
The 15-30 lens will do a great job, I am sure of that. With my Nikon D7000 I tend to use my 18-70 AF-S lens than anything else and surely it would be the lens that I would take with me. My wide angle needs are covered with the Nikon 12-24 f4 AF-S but any wide angle zoom like yours will do the job.
For the Zoo the 24-210 (I do not know of any 24-210) will be helpful if you are using a cropped sensor camera. A 70-300 would be a better choice in my case, I do not know what camera are you using.
My main thought here is not to carry the big lens.
