Pick a shutter speed that will freeze the motion (unless you intend otherwise), an aperture that will produce the DOF you desire, and let the camera choose the ISO. And if you don’t like the resulting ISO (which you can see in real-time in the viewfinder), then you can compromise either (or both) the SS or aperture.
