I have a Canon Pro 100 which came with some paper but I'm now picking the brains of my UHH family for suggestions on some really good quality photo printing paper.

Try red river paper. They have sample packs do you can see which ones you like.

That's a tough question to answer, especially because there are a number of paper surfaces and weights that are available today.
Do you like a Matte, Glossy, Luster, etc type finish? Will you be scoring & folding the paper after printing such as a typical greeting card or framing for wall hanging?
Initially, I would suggest using Canon paper because your printer will have the paper profiles already installed for printing with the various types of Canon paper.
I have the same printer I use Canon paper and ink for photos. I also use Ilford paper for when I have a special job that requires a luster or a pearl finish. in my case I have a number of different size papers with different finishes that I use based on what I want the end product to look like.
I purchase the majority of my paper through B&H. They have a very large variety of different brands, sizes and types of paper.

There are many. Go to a paper company website such as Lexjet.com and check out their options. There are others. Google "inkjet paper suppliers" and you'll find them all.

Red River is popular with UHHers, but Harman Galerie, Moab, Hahnemühle, Magic Inkjet, and others are out there. Order a few sample packs and download profiles for your machine...

I would suggest that you buy paper that comes with profiles for your printer. That is what attracted me to Red River along with their customer service. Lots of papers with good reputations aren't profiled, and they leave you guessing. Good profiles do matter.

Red River has a couple of matte papers that I adore: Paper Canvas and River Linen. ========

Try a sample pack from Red River - it's my go-to paper and produces beautiful prints.

A lot has to do with the print & maybe even more important, where it will hang on the wall or what type of light will be on it. Maybe try some of Canons different papers first & after that, try some of Red Rivers papers sample packs as suggested or Canson-Inffinity or, Moab sample packs. Some of the sample packs doesn't include all their photo papers in which you should reach out to them to get some.
Canon's paper would be cheaper to learn on & make sure your prints match your monitor. Make sure you use the ICC profiles that are for the Proo 100 7 paper that you are using & you should also calibrate your monitor with a calibrator like the Calibrate Color Checker Diplay Pro or Datacolor Spyder also. Jose Rodriguez has some Pro 100 vids on you tube as does Calibrate & Datacolor on their monitor calibrators. Good luck & have fun.

See, that's my issue right now. I just purchased an Apple Studio Display and this thing has several presets and one is for digital photography but when you click on calibrate it's telling me that I need to use some instrument in order to get these x and y values. I have no clue what they're referring to. I even contacted Apple help and they were clueless.
