I have the 200-500. I use it on my D850. I do not have the 80-400. The 200-500 will do what you want. It is not a premium lens, but it is a very good lens. I have used it for what you are wanting to do, including from the back of a church sanctuary. I did not find it necessary to use ISOs as high as the ones you mention, even hand-held.

It is heavy, though. Being able to "sit and prop" is beneficial, even if for part of the time. One option to consider is using your D850 in DX format and staying more to the short end of whatever lens you choose. Your media folks may be much happier with the smaller files when using your images for publication, and the lens will be much easier to handle when not fully extended.
