I went from the D500 to the Z6 and the Z6ii. Today, Mirrorless is the way to go. The only issue I’ve had with either the Z6 or the Z6ii (actually with both of them) is that the viewfinder occasionally gets clogged with either dust or moisture, which then stops it from switching back and forth between the two. Nikon service told me this is common, but I hadn’t ever experienced it with any of my prior Nikons. The biggest difference between the Z6 and the Z6ii is probably the second card slot, and perhaps a bit better Autofocus, but I wouldn’t hesitate to recommend the Z6ii as your best option now.

What are you shooting? I assume food, but is that all?
What lenses do you have now? What other accessories do you use (flash, tripods, etc.)?
What do you do with your images?
What budget do you have to work with?
It's pretty hard to make recommendations without more info about what you're trying to accomplish and the resources you already have. A Z6 II might be the perfect camera for you. Or it might be a terrible idea. Other people's upgrade experiences may be totally irrelevant to you. Or maybe their advice is exactly what you need.
