Either volume button in my iPhone 12 releases the shutter.
I never see the composition, as it is always to bright to see the screen on my wife's phone. I just point in her general direction and push a round thing I can barely see. So far, so good, she's happy with the images.

I have very similar issues with holding steady with my iPhone. Just curious, what brand remote and cell phone?

Check out the videos by Emile Pakarklis on YouTube. He has one on how to steady your device with a two-hand hold for better shots. I use it. It works quite well.

I think one of the main points was wanting/needing both hands for holding/steadying with nothing else to do so solutions that require using one hand elsewhere aren't a solution. Maybe I misinterpreted though.

Yep. Volume control on it is same as volume control button on phone. Nice, cheap remote. Doesn’t even need to be a Apple headphone. Any with a volume control has worked for me.
Pressing the volume controls on my iphone8 doesn’t make the camera work. Am I missing something?

You might try holding the ‘phone with both hands, and push the button with your tongue
