Roundup is the way to go. Can’t hurt with a once a year spray.
Vinegar does the trick for me. You may need a repeat treatment for the hardy growth, but we prefer it to Round-Up.

Sounds kind of weird, try boiling water. I use a tea kettle and pour down into the space between your pavers. Try a small area first to see if it’s the results you want. Usually take a day or two to see results.
raymondh, There is a roundup product that is longer lasting called extended control. The standard product only lasts 30 days, so you can replant if necessary.

I use Roundup on my brick patios and walkways, very effective!
Spray it on a calm day.
I use it on old tomb stones with mixed result .
My neighbour use javex and water is a sprayer.
White vinegar...or diesel fuel...ur choice.
Vinegar, salt & dishsoap. Wait for a couple of dry days.

At the 3:30 mark you can see him using it on brick pavers similar to yours. It does not discolor the bricks unless you really overdo it.
You do not burn the weeds to a black crips, only until they look like cooked spinach. This way the roots use their reserves to try to revive the tops. But if you burn the tops, then the roots use their reserves to put up new shoots.
Follow the directions with Roundup and wear rubber gloves. There’s a long-term formula that works for 5 months.
Roundup and others contain chemicals that that are bad for good animals and insects such as bees. The vinegar and salt mix will kill the grass and the roots , one treatment should last for a couple of years with less harm to the ecosystem and it is much less expensive.
Try making a mixture of 1-cup Epsom salts, a tablespoon of liquid dish soap, dissolved in a gallon of white vinegar. Use this in a large sprayer when it's not expected to rain for a day or so and I think you'll see these weeds have shriveled up and died. Works fine for us in Florida where the weeds thrive year-round!
My experience with vinegar is that it’s mostly ineffective. A salt solution also kills soil organisms. There’s lots of pseudo-science around the perils of Round Up. I’ve been using it according to directions for weed control around my home and garden for over 30 years with no I’ll effects.
