I let it sit until the internal temperature was 135 degrees, then took it off and heated the grill to 500 degrees. Then I seared it for 5 minutes on each side, removed it and let it rest a few minutes before slicing and serving. The steak was served with mac & cheese, ranch style beans and tossed salad. Mmmmmm, good!
