Aim your camera 45 degrees to either side of the sunset and 45 degrees up, in manual, set your camera for that exposure, then, return to the sunset and take a shot, look at the image on your rear screen and adjust your setting to please yourself. Make sure to include a fore ground to make it interesting.

The setting sun was so intense at direct eye level that I had to under expose by several stops. As a result the trees and foreground were underexposed and too dark. Because I shot in RAW, I was able to reclaim some of the detail of the village and trees and to select best lighting mode before development.

I sometimes use time exposure and underexpose . I let the camera do the work. You are an artist. Let it be what you see.

Do changes to in-camera white balance settings affect raw files, or just JPG images?
Sunrises and sunsets are an area where I often bracket and do HDR.

Just JPEG, but depending what software you use that setting can be automatically applied in PP.
