I have been there often and live in Tennessee. Grab a cup of Coffee and a Donut and head to Cades Cove, gate opens at 7 AM. Look it up on internet, Old Church's, Homes, Barns, Old Mill, Animals head out to bed down about then, Wild Turkey Flocks, Black Bears, Deer, Owls, Birds of Prey, and many others. Running Streams along the way. That would be a key place I feel.
