There are some wild cornbread recipes out there. My recipe is pretty benign and tasty.
1 cup polenta/corn meal
1 cup all purpose flour
1/3 cup sugar
big teaspoon baking powder
salt
2 tablespoons melted butter
1 cup of milk
1 egg
vanilla paste
180c 27 min.

Mine is similar...no vanilla though only 2 tablespoons sugar. I get the sk**let hot in oven at 425, then add some oil, put back in oven for a few minutes...then pour the batter...the hot sk**let makes an awesome dark crust on the bottom. I always pull from the oven, slice a wedge, then cut the crust off, butter the crust...and then heaven!
