"Greek" White Bean Soup . . .

Greek white bean soup is a custom of all parts of Greece - FASOLADA! Very inexpensive to make, no meat! Soup is the replacement of those big dinners and a wonderful break in the process.

White bean soup is famous all over Greece. It's tasty indeed with no meat! Sautés one lg onion chopped roughly, 3 or 4lg carrots pealed & chops small, 3 celery stocks chopped roughly.

Add to 8L Pressure Cooker with olive oil and 3 bay leaves with 4 rough cut garlic cloves, sauté 6 minutes or until onions soften. Next, add the 1lb bag of Navy White Beans & 3qt of spring water and mix well. Next add two 6oz cans of tomatoe past mixed in really well.

Turn heat up to high, when liquid starts to boil add cover. Pressure cook till 45 minutes on high, DONE! Let set to rest when done with cover off . . . Tasty and simple to make! AP

Delicious. I had a bowl of this with a Greek Salad and a bottle of Domestica (white wine) at a Cafe on Mikinos. We sat there and watch the sun sink into Homer's wine-dark Mediterranean.

Then had a panic moment because we realized we were about to miss the last tender back to the ship.

Sounds really good. I bet it would be even better with some meat. I'd suggest a couple meaty beef shanks. The marrow would make it really rich, great mouthfeel.

We compliment this with Greek Feta(not French or Bulgarian) and a loaf of home made crusty bread. My wife also makes the lentil dish Fakee which is lentils mixture( brown, green, red, or black) oregano, bay leaves, mint, salt & pepper, canned tomatoes and her secret sauce. These dishes are very healthy and provide a wealth of high nutrition to our diet. I thought Lent was over!!

Looks delish! One watch out - on one occasion I had the skins of beans plug the valve - if I hadn't noticed, it could have been interesting. Be sure it is "rocking and rolling". Worst case, run cold water over the lid till the pressure drops, clean and start again

Beans should always be pre soaked for at least one hour. They could be dirty or have critters sleeping in there.
I use to sell vegan products and one of the best companies that had high quality beans & grains was and is Goya Brand. And their products are readily available. I have no connection with them & I never did. I sold things in 25 & 50 lb sacks.

Another delicious and healthy dish, AP. It’s interesting how many cultures use beans as the main ingredient in so many dishes. My Mom was Italian and often made white bean soup using prosciutto for flavor. You’re still a master of the pressure cooker and use it successfully in so many of your dishes. Thanks for sharing another wonderful recipe.

Looks and sounds delicious! What if you don't have a pressure cooker but want to make it in a crock pot?

Almost anything you can cook in a pressure cooker can be cooked in a crock pot or a good enameled iron pot on the stove top - the difference is how long it takes - pressure cookers are fast. The key in this recipe IMO is the beans. Pre soak get them cooked to nearly where you want them texture wise, and move on from there. Rough guesstimate - two and a half to three times as long - but until I've made it, just that, a guess.

Welcome, rgrenaderphoto! Your response was wonderfull. Simple dishes are great! And with a Greek Salad, it is more enjoyable. I keep forgetting to add a glass a vino . . . the best part of a fine dinner. Thank You! AP
