If you are driving or will rent a car on arrival, why not take the 70-200? You don't have to lug it if you don't want to but it will be available if you see that you need it. I've gone both ways, but if I have a car in which to store my gear, it goes with me.
I want a trip to Key West one of these days. Have only spent one day there, while on a cruise. Wasn't nearly long enough.

I've been to Key West. It's an interesting drive on the road over all the keys. The longer lenses may prove useful during the drive, but in and around the destination of Key West, your shorter zoom lens should suffice for nearly all your photography. You could keep your longer lenses in your car at the ready.
Consider visiting the Truman White House there.
