I disagree about the lack of impact. I think the monochrome version is an interesting image that creates a mood and evokes emotion.
As the OP indicated, the sky in the last image was replaced using Luminar. It is a completely automated feature although Luminar does provide tools to adjust the settings. In addition, Luminar also alters the lighting and colors of the rest of the image to complement the sky that was chosen as a replacement.
It is intriguing technology that seems to work very well, and is fun and easy to use. My personal preference, however, is to use the skies that were captured in my original images. I find that Luminar skies often tend to draw one's eyes away from the original subject.
