Back in the early days of the west beef was not always available as that was the income/$$ for the house and not being able to keep 500 to a 1,000 of meat from spoiling lots of meals were "beefless" but include other "meats" or none.

In San Antonio we say that if a spoon won’t stand vertically in the middle of the chili bowl by itself, what you have is soup not chili.

I always use chocolate in my chili. That really does add something if you do just enough, but not too much.
