A chili recipe from Garys Galley at Moby's. It was pretty famous chili in a very famous bar.
10 lbs hamburger
5 lb diced onions
1 #10 can peeled tomatoes
1 #10 can tomato puree
2 # 10 cans kidney beans
2 to 2-1/2 cans Brooks chili beans
1Tbsp oregano
2 Tbsp garlic
1Tbsp paprika
1-1/2 Tbsp chili powder
1Tbsp salt
2-1/2 Tbsp crushed red pepper
1-1/2 Tbsp cayenne
1 oz unsweetened chocolate
The chocolate must be the secret ingredient

Looks great. I think Brooks does have the best chili beans.

1 1/2 Tbs chili powder is WAY too little for 10 lbs of meat.
Agree. I use that much in 1 1/2 pound of hamburger

I have been to numerous chili cookout's, especially Bull Head City, one of the most prestigious cookout's, which is across the Colorado River from Laughlin, NV. According to them, (and Texas chili cooks,) that if you put beans in your chili, it is not chili and will not be judged!
I'm not trying to open a can of worms, but I also tend to agree that it is not real chili if you add beans. It is felt that adding beans is just a filler.

I don't think I have a pot that would hold 10# of hamburger. When I make my own Chilli at home I use half hot sausage and half ground beef.

The onions should be available on the side for those who like them, saving the chili from being ruined for those who don't.
In Texas, some people think that beans in chili is a sacrilege.
🙀🙀
But, looks good to me, I’ll give it a try.
not for me I hate that mexican smell !!

Chili without beans is a sauce to put on hot dogs.

It seems to me that my family's heritage recipe for True Texas Chili must not have ground beef but Armadillo.
You lost me on the first line. No beef!

Chili has long been a favorite meal in my family of deep Texas/South West heritage-recipes are so varied they could be called "secret" as no one ever put the same amount of anything in every time.
Here are a few that come to mind:
Chili Con Carne - with meat & beans
Chili Sin Beans - without beans but with meat
Texas Jail House Chili - Damn Hot lots of beans, onions, spices - little or no meat
Texas Trail Drive Chili - same as Jail House but with what ever wild game that was brought to camp - yep Armadillo quite often.
Mom's most often served was left over pinto beans (smoked Pork flavored- bacon rind, ham shank usually) with chili, stewed tomatoes, onions always served with corn
