Seems more likely to me that maybe the "dinosaurs" either consider their 'straight out of camera' images are good enough for them, they are not interested in improving what the camera produces or don't have the skills required for effective use of PP?

And most people that shoot SOOC are really using processing too. They’re usually shooting jpegs so the processing is being applied by the camera based on settings in the menu.

Depends on what kind of monkey, and whether it's doing the Macaraina on my head at the moment. As a matter of fact it occurs to me there might actually be a reason to use the user preset modes on my camera, which I've ignored until now. I could set one to full auto and another to manual and do whatever strikes my mood the rest of the time. To get the max out of my new camera's dynamic range I've been shooting raw, spot metering on the brightest point in the picture, then bringing up the shadows in processing. It's a bit of work, but well worth it.

We have this discussion periodically, All digital photos are processed, just as all film was processed. In the Age of Film, a human typically was involved in processing negatives, while slide processing was completely automated, and today the choice is also between human control of processing - making adjustments for each image - or completely automated processing.
