Of all the Mirroless the Olympus OMD -E-M1-MK II - has more features than any of the other brands of mirroless, by far. Get the PRO lenses if your budget can afford it. The Sony A6000 is a good walk around camera, but it is not weatherproof like the Olympus.

I have both the Olympus and Sony. Sold all my Canon gear.

I love the Olympus. Fugi is OK - but doesn't do what Olympus can do.

I get it... We all like our choice of camera the best... me too. You love the Oly, “but it doesn’t do what the Fuji can do.” You are correct, check out a professional comparison review to accurately make a comparison. Fuji blew Oly out... https://cameracreativ.com/compare/fujifilm-x-t3-vs-olympus-om-d-e-m1-mark-ii

I wouldn’t say Fuji blew Oly out. I’d say that there are different reasons I might choose one or the other. Actually I chose neither. I still have and love my Nikons, but when I need a lighter kit, I go with my Panasonic G9. Besides not having IBIS, another downside to the Fuji is it’s still an APS-C camera. The lenses for that are not going to save weight over the Nikon lenses while the MFT lenses can offer a substantial difference in weight.

Comparing specs is not a valid “professional” comparison. A valid comparison would entail side by side image comparison in different shooting scenarios, different lighting conditions, ability to focus in fast changing situations, etc.

So you are willing to change a camera in order to lose 1-2 ounces in weight? Really?

Besides, all the weight is in the lens, as you will find out. The winner might be the Olympus system lenses because they are physically smaller than APS-C lenses for the Nikon or Sony.

BTW, I would hardly call a 1.1 lb camera a "brick"

Cameracreative is an advertising site poorly disguised as a review site.
Performance has not been compared - only specs - and a major spec (size) is questionable, with other specs ignored.
The OM-D is two years older. In these days of fast moving technology you might just as well compare a Hasselblad with a Box Brownie.
Basically you have been duped.

Im only buying one camera. I don't have the luxury of a toolbox full of tools for different projects. So im looking for an all purpose camera to use for vacation, traveling, family shots, and some hobby shooting.

You do not have to put a lens on the RX-1. It has a 1 permanent lens.

I don't want to go small just for small’s sake. Staying with Nikon would likely be the 7500 with a lens making it bulky and inconvenient for vacation travel. But too small a sensor may be a sacrifice i might hesitate with. Prob would need to try it out. I struggle now with sharpness usong the Tamron, so thats also a factor for me. I dont really think im asking too much...size, quicker and sharper focus, and some good lens options.

I cannot see that you would find an M43 sensor too small. As has been said before - quite a few pro photographers are swapping to 4/3. Panasonic's G85 would suit your needs - or for a littlen bit more - G9.

Considering changing brands from Nikon as Im upgrading to a new camera. I have only 2 lenses so im not tied to Nikon. D7500 is a heavy brick. Considering lighter and smaller mirrorless. Maybe Sony or Olympus? Any suggestions?

Consider the Sony A6400 or A6500. the trade off between the two is IBIS vs great fast and accurate focus/tracking, although the A6500 is no slouch. Dump the lenses and stick to Sony OSS, particularly with the A6400. The results will amaze you.

Forget adaptors, unless you are inclined to tolerate the handicaps. All of them cripple the camera.
