I watched the you tube segment comparing the 850 to the D500. I missed the shutter count. Shooting the "living piss" out of both hardly counts as a quantitative measure.

I suggest you get a D500. I had mine for 2 years before getting a D850. They are so much alike, you don't have to think about which camera you're shooting with.

Why MILC? What do you hope to gain??

Is the D850 your first camera???

My practice has always been to retain a 'retired' camera, packed away with a reasonable kit, as backup to my new primary camera or to supplement it if I need two of them at some time.

if the D850 is your money maker then buy another D850 body. that way you maintain your shooting style and results.

The D500 (not mirrorless) is a good companion to the D850 because it is a DX camera and it is a very good camera. If you are intent on getting a mirrorless camera I would recommend the Nikon Z6 along with the FTZ adaptor. It is a fast FX camera and has excellent high-ISO capabilities.
