Great suggestions!

I do wonder about the extensions on the buildings that go over the water way (back side of structures). Is this where the kitchens are and does this help keep the heat and cooking smell outside the house? Also ... do they dump food trash in the water? I'm guessing, can you clarify?

I've been to Peru and they wouldn't think of doing this as they use the river waters to wash cloths by hand and it remains very clean. Those not near the river use five or so buckets to wash cloths. It doesn't get very cold there unless you are in the mountains. Hot water is a luxury and those with it have solar panels that warm a tank of water so it must be used carefully so everyone can shower (and if you are late getting back home you guessed it, you get a cold shower). Peru is modernizing now and they have WiFi and cell phones now but it's costly for them. Most hotels claim to have hot water but didn't. Oh and bring your own toilet paper and soap, most places don't have any, even at fairly nice restaurants but there are toilets, some without seats. Many places you cannot throw your toilet paper down the commode so it's placed in a trash can by the toilet. Sometimes I see this done here in the USA, it's from illegals who come over our boarders and aren't screened to know our ways so they are following their home land rules. And you guessed it, many are bringing in diseases that we haven't seen for 30 years because they aren't vaccinated. This is what proper immigration prevents.

I went to China on business in the 70's and 80's before western hotels , etc. were there.
This is how I remembered China from those days.
A tremendous transformation occurred later, although the rural areas have not changed much.

Convenient place to walk up and down the line to photograph/video the trains. There was a small coal mine at the end of the line (since closed). We stayed several nights in a larger town at the other end of the line. No roads in the area, so we mostly had to walk up and down the line.
