Thanks for taking time to respond to this shot Giradedon. I haven't tried canning or making jam. It seems that I spend a lot of time waiting for them to be ready to pick only to discover the birds and rats have beat me to it. I might get 8 or 10....if I'm lucky.

The last time that I made it, I cut the amount of sugar in half and it was even better, tasting the pears over the sweetness.

I found that if I cooked down the pears as I found them, and froze them until I had enough to make a complete the recipe, that the color and flavor was better. The color needs to darken slightly which only happens if you cool down the pears then re-cook them a second time when you then add the sugar and other ingredients. There used to be a recipe for pear jam inside the Certo package.

Thanks for taking time to respond to this post Szaljj. I appreciate all of your suggestions and may take a little time this season to give it a try. I have frozen apple pie filling in pie pans to use later in the year when I felt like making pies. Freezing the pears after cooking them down makes perfect sense and probably saves some time later on.

It is extremely rare for us to get snow here although we got a dusting on the tops of some of higher hills. I'm glad you liked this shot and hope you can look forward to a similar sight very soon.

I saw your picture and took a look at my pear tree. It is loaded with blossoms but ours are not as big as yours. Might be that we are further north.
We had a real bumper crop last year, but did have the tree pruned last fall, so we were not expecting a big year.
