It would not be problematic if you use the back button to lock focus when recomposing, instead of activating focus. You can then still use AI Servo for both moving and stationary subjects. And, you can lock focus and exposure on your subject before recomposing. You still have full control.
On my Nikons I have continuous focus set for single and continuous shooting, but haven't used single in many years.
