The last thing you want to do to an expensive steak is overcook it.
I cook to near 125 degrees F and let it rest for several minutes.

Cook the meat some more and take out the avocados and I'll be right over.

Your dinner looks completely yummy. Too bad there is a major recall on avocados. Listeria contamination. I would take the chance with your great meal. The steak is perfectly prepared. Hope you enjoyed it.

A saying in NZ is "knock it on the head ,wipe its arse and slap it on my plate" So there must be a few Kiwi's who like their steak rare also , not me.

it was a limited recall that did not affect Washington DC or the whole foods in Washington. And I feel fine.
