I found a nice NY strip steak at Whole Foods and had an avocado
that had just reached ripeness. Served with rice and beans and
sauteed red pepper and onion. No complaints.

I would try putting a little heat onto that meat before I would go near it or it might bite me first

Looks delicious! If there's no pink in the center of the meat, it's over done and tougher than it needs to be.
I had a great sirloin last week. Sirloin is not normally the most tender cut of meat. I learned of a way to make it more tender and it worked great. I heavily salted it all over and let it rest for 1 hour (not in fridge). Rinse the salt off and pat dry. Season normally then grill it making sure it's not too done. Turned out great and tender. More tender than it normally was before using the salt technique. And it was not too salty!

I may be considered Philistine, but I like meat that is cooked through and browned on the outside so yes, it looks raw to me also.

Beef comes in three "donenesses": Rare, Medium and Well Ruined!
