Vanguard, Tenba, Ruggard, Think Tank, Kata and Case Logic all make good bags.
I prefer a messenger type bag with a zipper on the top that makes it easy to get your camera and lenses out without having to take the bag off your shoulder.
It can be worn on the shoulder or cross body. Just make sure it has a good adjustable strap with a nice comfortable pad on it.

I shoot wildlife so quick access is important. But a zipper and Velcro are too noisy for walking around. A clip closure works well, then zip it closed when I’m done.
We have and use both Lowepro Roller and Tamrac backpack, and recommend both.absolutely faultless....
I faced the same issues as you. Ended up with a messenger bag, the Reflexion 7. Forced me to slim down my kit to include camera body, 10-20mm Nikon lens, 18 - 55mm Nikon lens, and 80 - 200 mm Nikon lens. Allowed me to carry an extra battery, a charger, a water bottle and some snacks. Haven't looked back.
I have had both Tamrac and several Lowepro bags. I have liked them about the same, however, Lowepro bags are usually heavy without camera equipment. Tamrac bags are usually lighter than Lowepro bags. I have been buying mostly Lowepro since I had very positive customer service experience with them. I had the ProRuner 350 AW for several years. After a few years the zipper got stuck and would not budge. I emailed Lowepro and they mailed me, at no charge, a brand new Lowepro ProRunner 350 AW II. That is why I have purchased two other Lowepro bags since my positive customer experience.
I have 2 Manfrotto bags. A larger one for my Pentax K50 and 2 additional lenses and a smaller one for when I don't want to use the long lens. The smaller is a sling type. Both are backpacks. The smaller is easy access, when you swing it around you can get out things without putting it down. I prefer backpacks to messenger as it is easier on my shoulders. I'm 71.
