I shoot with the D810 and D500 regularly. Both are excellent choices for differing reasons.
If you are willing to try a refurb or gently used camera, the D810 can be had at substantial savings. I purchased my D810 from a member of this site, who had just upgraded to the new D850. It had a low shutter count (under 5K clicks), original box and all contents, additional battery, the Nikon battery grip, two lightning-fast memory cards and several other things....all for under $2k. It looks and acts like new.
I don't believe you would notice any difference between an image quality from the D810 and the D850 under most shooting conditions. The 36MP full-frame sensor of the D810 produces a file with plenty of room for cropping or enlarging.....and takes less storage space than the files from the D850. Neither have the AA filter, which I find beneficial. The D810 has the on-camera pop-up flash and focusing light....if that is important to you.
I don't think you could go wrong with either choice.

I'm sure when the D810 came out a lot of people hesitated because they thought it was too new. It would appear mirrorless camera are the next greatest and best. Just like the D810 when it first came out.

If you're buying new, go with the 850.
If budget is a big issue, look for a good used 810. You don't say what you currently shoot with, but I'm sure you're going to need to spend some money on lenses, so keep that in mind.
I have rented the 810, and it's a whole lot of camera. I like the fact that I have shot Nikon for a while (currently own a D7000) and the operation of the 810 was very familiar. I'm currently torn between a used 810 (about $1100-$1300 these days) and a new 850 at $2000 more. Yikes, now that I type it out, that is quite a difference.

This is a fantastic discussion and it helps my knowledge about me trying to make the same decision. I’m going to get one of these two in 2019. How about the computer processing the pictures from these two. 36 MP is a ton of information. I think first I have to get a new MAC first. My iMac is a 2010 and slow now, so first things first.
I have theD810 and am perfectly happy with it. I now use it for night sky photography. I also have the Z7 and like it especially for its VR
I recently purchased a D-810 and it is a fine piece of equipment. I don't regret it.
I have the D810 and love it especially when taken pictures indoors as well as outdoors. I also have the D7100 and you can see the difference in features between the two cameras.
I went from a 610 to a used 810. I paid $1300 for a camera with 12,000 clicks. The camera works fine but sometimes I fret and imagine the previous owner dropping it at some point in the past. He was stranger. But I would do it again. I am a big cropper and really enjoy the extra MP. It definitely improved the quality of my finished product and I can say it took my photography to the next level. Equipment does make a difference. Buy the best camera you can afford, I don't think you will regret the decision.

You might want to rethink your rejection of the Z6. I have the Z7 and the EVF is best in the business but the real winner is the IBIS (in body image stabilization) which allows you to buy non VR lenses which are lighter and cheaper. I bought a mid 90's 105 F2.8 Micro Nikkor which on the Z7 is manual focus but with a macro and viewfinder focus indicator who need it for $220.00.

I bought A D800e when they first came out and love the camera, bullet proof, great pics , I've purchased other cameras since then HD3II, sony AR7IIs but the nikon is still the first camera I pick up for a job.
I really like my D810 then again I also really like and use my D700. The only thing I wish the D810 had was a folding screen. I also would not like not having an on board flash as the D850. The D850 will probably require you getting a faster computer than what you have now. So the newer camera will cost you more for a flash, and a computer. I've decided I have enough camera for my age.
