If it doesn't have be something for photography consider these German Lebkuchen. It's soft gingerbread inside with a dark chocolate base and sugar glaze on top. They're delicious. Brandy filled chocolates are also good. I buy these every year.
You could also think about getting him some nice pajamas !

I would stick with the pajama's.
Get him some Christmas season design... like with some reindeer. Nothing corny like a santa. Keep it classical.
Maybe a gift certificate for a camera cleaning at local camera store. It’s always nice to have an excuse to visit the camera store and be able to touch new products

I rarely offer my opinion in the thread but I concur with my fellow members who suggested a gift card. Using B&H as an example, we have hundreds of thousands of items on our website which covers not only Photographic related items but include tens of thousands of Audio, Video, Computer and Home Entertainment products and their attendant accessories. I myself prefer receiving a gift card over a gift because it gives me a host of products from which to choose from. Additionally, we here who are into photography know all too well that no matter how much gear we have there is always something new that we would like but can't quite justify. And you would be surprised how many useful items you can buy for $125. As an example, I was always concerned about properly cleaning the front elements of my lenses without damaging the factory coating when one of my colleagues turned me on to ZEISS Lens Wipes (60-Pack) B&H # ZE60CBLW MFR # 000000-2127-721 and for less than 6 bucks I can stop worrying about it. That would still leave $119.00 left to spend on a $125 Gift Card.
I'd go with the Gift Card.
