Why can't a dslr have the same amount of functions as a P&S or Bridge Camera

Simple answer is that the prosumer cameras - i.e. DSLR's are for photographers that want to do there own creative post processing instead of leaving it up to the camera to do it for them. My Canon 5DIII has HDR and multiple exposure options and you can also customize sharpness, color and color filters in camera.

The answer is they can. My D7500 has most of those features. Your DSLR is probably an older camera than your P&S.

I also have a Panasonic ZS-60. Both my D7500 and ZS-60 are equivalent feature wise. But the D7500 is my choice for planned photo shoots/trips as it has a bigger sensor and more capabilities via different lenses.

The ZS-60 is for GP photography when I’m out with family and friends and happen to see something that would make a good picture.

Actually I take the ZS-60 with me even on planned photo shoots/trips as a backup camera just in case.

Was does a 60's car only have AM and the new ones have satellite? If 4k video is that important to you you should have bought a video camera they are designed for it regular cameras not as much.

This thread started asking about why DSLR's couldn't have a lot more features. I just got to thinking about my D800+24-70mm combo vs. my old Canon ftb and 50mm lens. What a difference in size, weight and convenience. I just went to a family get together last week and took the 800 and 24-70. It was somewhat cumbersome. My old ftb and 50mm was when I really enjoyed photography. It took me a little longer to focus, but I didn't need a book to figure out how to do it, and one thing about my photos back then.....they were IN FOCUS!!! I have some great family photos that were taken with that combination. Simple, and much smaller. The one advantage digital has? Cost savings. However, I was more of a photographer back then....planning out each shot, shooting totally manually, back before everybody had a 35mm.

My suggestion for cameras? KISS.
