I used Lightroom to stitch.
Exposure settings were F8, 1/640, ISO 200, and the lens had it's stabilization turned on, raw capture.
Images were stitched straight out of the camera with only the lens profile applied, full size. The resulting image was 14763x9438 after stitching.
Computer is an Intel i7-2600K overclocked to 5 GHz, 32 gb ram, LR catalogs reside on a SATA SSD, Samsung 850 EVO. LR had no issues handing the large image, either during the merge or while processing in LR or PS.

Thanks for the additional information.
My SWAG was a bit off. That's close to a FF field of view for 75 mm and that explains why there is no distortion. The sensor positions are nearly parallel.
And the exposure shows that broad daylight in Ireland is not much different than Florida.
