I have been doing this for years, I use an Olympus M43 camera with a 20mm Prime lens (= to 40mm). I try to emulate the human eye's field of vision which in my case is 170 so ideally I should use a 22-23mm (=to 44-46mm) lens but this focal length is not available, I do use a 25mm (= to 50mm) but I consider this lens is not wide enough so I keep this lens on my M43 Panasonic camera.

Creativity in it's self requires more than one lens for me. That said I usually carry two camera bodies when I shoot. One has a 70-200 2.8 attached and the other has the 200-500 lens attached. Between these two I can cover most of what I need. For instance, I had been hunting a wounded male Green winged Teal for days, he got up pre-dawn and then swam to open water though a canal. I got there at 6:15 AM and there he was, the 200-500 was too slow, so I pulled the 70-200 2.8 and got this shot as ISO 5000. If I had not brought two lenses, I would not have gotten him.Grainy, Yes, it is, but I got him.

I do this whenever i acquire a new lens. I use the new lens exclusively for at least a week. I want to learn how using the new lens will help me define a scene.

That's no challenge. I rarely have more than one lens when I went out to take pictures.

Actually, I do that frequently. However, I expand on your one lens and take just one prime lens.

Me too. I take my 50mm 1.4. It takes me back to my film days, with my Minolta.

No taking me back. I'm still there. I just load up about 20 exposures on this flexible sensor material and put that in my Nikon F or Leica IIIf, etc. I'm there.

I am thinking right now about 1 lens, 2 cameras.
I have 2 identical Nikkor 50mm f/1.4 AI lenses. I think I put one on my Nikon F3 and load it with Fuji Provia 100 and the other on the Nikon Df. The Df would be set at ISO 100. I would try to find some kind of settings in picture controls and leave it there. Same thing for color balance.
I would then use both side by side compared the processed slides to the JPEG's SOOC. No PP allowed any processing I must chose and set it in the camera before starting the project.
I want to see if they are the same.

Sometimes I miss my little SRT 102, but it went to a good home. A young girl I worked with was taking a class on shooting black and white at a local junior college, and was looking for a reasonably priced camera. I sold her the camera, all the lenses and filters for $50.00. She was thrilled, but it was really kind of selfish of me because I actually felt better about it than she.

Nothing wrong with that, but the OP did use the word "challenge". In other words to try to do something out of your normal comfort zone which would cause you to have to look at things differently. It's an exercise.
