Some of us were born with short lenses, and do not like to be reminded of that fact.
90% of people are satisfied with snapshots obtainable with cell phones and P&S cameras. The rest of us are photographers.

You forgot to mention how COOL we look with that big DSLR hanging 'round our neck with the strap and camera saying in big letters that you are A NIKON MAN ( or person, sorry ladies) Far better to look cool even if your pics don't on your computrer. Think I'll take a walk down the street with my 70-300 'round my neck. Be cool, rock on
In use my little Nikon for snapshots, but my Canon Rebel for photographs!

So are you saying you believe cameras such as Canon's
5D MK III and 1D X, or Nikon's D 800 do not utilize "advanced electronics", and should be considered "old school stuff" and sentimental technology?!?
No knowledgable, clear thinking individual could possibly make statements like that and hope to be taken seriously.
But to offer an answer to any reasonable portion of your question "Why Do You Drag Around Expensive Photo Gear?"... well a lot depends on what you shoot.
If you mainly shoot kids in the backyard, photos of your pets, vacation snaps, scenics, birthday parties and other similar situations, then a P&S will likely be fine for most of those.
If however you shoot action such as sports or wildlife (as I do) then a P&S is just not going to cut it.
Will your "advanced electronics" little Sony get these shots I've posted here?
Maybe, but probably not.
In any case since you have never posted *any* photos here you have taken recently, we have no way to know if you are any good and know what you are doing, and you are in no position to criticize other photographer's choice in gear.

I may not have a heavy DSLR yet, but why did I purchase a bridge camera? Because I wanted to get better. The P&S camera I had had limitations. Why am I hoping to one day get a DSLR? Because the bridge camera I have has limitations and I want to be better. That's why many people go out and buy a DSLR now that they are so cheap isn't it? Because they want better pictures; even though they will never learn to take it off of the auto setting and don't realize that they may never get the pics they want if they don't take if off auto.
I have these things because I want to have the best that I can afford to get the pictures that I see in my mind. I am enrolled in NYIP because I want to have training that will allow me to know what I need to set my camera to get that image I see in my head. 10 years ago would I have thought about having all this stuff? No way! I was a snap shooter with a P&S who thought that I could get any image I wanted with it. I have found that isn't the case. So I will carry the gear I want/can afford to help get the images in my head captured on that amazing sensor the camera has in hope of letting everyone else enjoy what I experienced while getting the image.

Oh - Swamp Gator - those images are phenomenal! But think how good they COULD have been with a P&S with fancy electronics! Such a shame.
